A friend of mine of cajun heritage boiled 85 lbs of crawfish in my backyard a couple years back. This is a closeup of the feast, which was spread out on a newspaper-covered table. He has the best recipe I've ever tasted with a perfect blend of spices. Along with the crawfish he boiled whole small red potatoes, whole garlic bulbs, halved vidalia onions, brussels sprouts, halved lemons, whole white mushrooms, corn on the cob pieces, and cajun sausage pieces. Add to that a variety of Abita beers and that's how we party in the springtime in New Orleans.
